Last Friday we had the pleasure of speaking with Virginia Ruiz, a lady of many virtues: influential, entrepreneur, and above all a mother dedicated to the well-being of her family.
During this interview, she shares with us some of the key wellness tips she practices daily and that help her stay energized, even during the busiest days.

8:00 a.m. - Oatmeal and Matcha Hotcakes
Because breakfast is the most important meal of the day! Try this delicious breakfast recipe high in antioxidants, flour-free, light and delicious.
- 2 Packets of NICE Matcha Green Tea
- 1/2 cup of oatmeal
- 3 egg whites
- Cinnamon powder
- 1 teaspoon vanilla
- 1 teaspoon of natural honey
- Chia seeds (optional)
- Almond and Coconut milk
Mix everything in a blender while you heat your pan to medium temperature.
They are prepared just like regular pancakes in just a few minutes! I recommend pairing them with my delicious Matcha smoothie made with almond milk.
1:00 p.m. - Grilled shrimp and sauteed veggies
I love to share the things that I do and bring well-being to my body! Here, I leave my lunch recipe, rich in antioxidants, proteins, and vitamins!
- Olive oil spray and Himalayan salt
- Asparagus, finely chopped garlic, dried chili
- 1 bag of shrimp

7:00 p.m. - Egg and Spinach Muffin Sandwich

- 1 muffin 100% integral
- 1 complete egg
- Spinach, Avocado, Tomato, Onion
Put the Muffin in the toaster. With a little bit of olive oil, cook a whole egg. Add spinach, tomato slices, avocado, fresh onion, and that's it!
I like to enjoy this dish with the delicious NICE Rooibos Red Tea, since it has many benefits and is a perfect natural relaxant for your digestion and to help you rest.
Remember, do not forget to have your dinner at least three (3) hours before bedtime!
